Roast Duck with noodle salad



Ingredients:
1 whole duck
1 cup oyster sauce
1 cup sweet soya sauce
½ cup light soya sauce
200 gm honey
100 gm hoisin sauce
 1 kg Egg noodle par-boil
2 tablespoon sambal sauce
1 tablespoon dark soya sauce
1 tablespoon chicken powder
1 tablespoon chop garlic
2 whole eggs
1 medium red onion slice
2 tablespoon sunflower oil
Salt to taste
1 cup bean sprout
½ cup spring onion chop

How to make duck with noodle salad:


Marinate the duck with top 5 ingredients below the whole duck, keep marinating whole night.
Roast the duck in 140 degree temperature for 115 minutes and cool it.
Debone the duck, use the meat.
Cut into slice and keep aside
Heat the wok, add oil ,fry garlic and onion until the onion turns brown
Add egg, toss until half cook, add noodle and stir fry  once , add  sambal sauce and remaining ingredients except duck ,bean sprout and spring onion.
Stir fry again until the noodle change the color and looks smooth
Add duck and stir fry again, add bean sprout and toss once
Sprinkle spring onion and toss again, take out from the wok and cool it serve a salad.
Garnish with some spring onion.
